An artisanal brand of Japanese soy sauce has been described as an ‘amazing dip’ for spring rolls, tempura vegetables and gyoza. Yamazan Kyoto’s 500 Days Aged Japanese Premium Soy Sauce is on sale at Amazon for £17.28, with authentic Koikuchi flavour and a mellow aroma. Other versions of the sauce are smoked (£20.30) and vintage (£20.30).
Yamazan Kyoto’s 500 Days Aged Japanese Premium Soy Sauce is naturally and slowly brewed for more than 500 days, fully bringing out the umami of fine ingredients and leading to a deeper and richer flavour and aroma of this distinctive sauce. Authentic Koikuchi soy sauce has four kinds of highly nuanced taste behind its natural saltness – ‘deep umami, mellow sweetness, refreshing sourness, and elegant bitterness’.
Yamazan Kyoto’s 500 Days Aged Japanese Premium Soy Sauce can be blended with other sauces like steak sauce or used for boiled recipes such as gumbo and Jambalaya. This soy sauce is handmade without cutting edge machines, made with all natural ingredients in Tatsuya, Japan, by craftsmen who have mastered traditional methods. Besides Amazon, the sauce is available at Ebay for £24.04 and onbuy.com for £44.69.

One happy customer said: “I purchased this soy sauce after watching a YouTube documentary about the ingredients and products Michelin 3-star restaurants use. After learning about the history of soy sauce and how very few use the traditional Japanese methods nowadays, I had to try this traditionally-made soy sauce for myself (while it was on a Black Friday sale, of course) to see if it was really worth it. And trust me when I say this; you’ve never tried real soy sauce in your life until you’ve had something like this!”
Another wrote: “I don’t mind paying good money for good soy sauce. And this *is* good soy sauce. It is very rich in darker flavours and would probably be great as an accompaniment to cuts of red meat that need a lot of salty seasoning, but can also stand up to a bold umami seasoning. I personally no longer eat meat, and I use soy sauce with vegetables only. For this, I prefer something a little more complex in terms of the interplay between umami, fermented flavours, sweetness and saltiness. This soy sauce does make an amazing dipping sauce for gyoza, spring rolls, tempura vegetables etc, when mixed with some combination of mirin, chinese vinegar, sake, sesame oil.”

But not everyone was convinced. One person wrote: “I’m not going to pretend that I’m a super-taster or anything like that. However, I like food, and I like Japanese food, and wanted to use a proper soy sauce. For the price difference, I thought I would be bathing my tongue in an unforgettable flavour that would make me regret all the cheap Costco soy sauce that I had purchased in my life. Sadly, this did not happen. Sure, it tastes nice, and yes, it is delightful with sushi, but is it so nice and so delightful that I’m going to buy another one? No… Yes, it does have a little more umami and depth than cheaper sauces, but it’s not worth the price difference.”
